Not really a "paring knife" in my opinion
Don't get me wrong, it's a nice knife with a good steel and very sharp. The size and ergonomics make this more of a small utility type blade, not a paring knife, IMO. There are reasons to use this knife, but I like a bigger utility/petty knife usually, and a smaller, more flexible and throw-away paring knife to use instead of this. EDIT: Ok, I used it as a paring knife, and it is really, really good. I still use mostly my smaller plastic handled knife for most things because it is easy and abusable, but dang if this isn't a great blade and a joy to use at times (or on special occasions, yes, I use fancier knives for special occasions, hahaha). It is too nice and too robust for what the use case is in a kitchen, IMO.

The knife performs consistently with other professional knives in its price range.
Please look at my images first. The blade balances well for something that you'll be moving quite quickly. This helps in not dropping it. The handle is a unique piece of wood, almost certainly shaped by computer control. However, the mating between bolster and wood is not impeccably perfect; it is still quite good, is filled in with sealant, and has no gaps. If you were to close your eyes while handling it, you might assume the hande was made of a dense plastic. Although, it is definitely a natural product. I mean this in a good way. It feels like you could wash it a thousand times, and never see the wood loose its tone or smoothness. It must be impregnated with some fancy modern resin. I actually like that a lot. I want my knife to last. My hand is just a tiny bit big for it though. But when using it as intended, my index finger will not be near the blade. The blade is definitely finished by a computer. And again, this is a benefit. I've been using many hand made expensive knives; and I can never replicate the original artists angle. They're usually not the same on each side anyway. This knife is sharpened down the same amount on each side, symmetrically. There is also a secondary bevel at the very edge of the blade. See my microscope image of the egde. It arrived sharp. And the hardness is definitely as claimed, somewhere in the Rockwell 59 range. You (well, me anyway) can tell by the sound of the metal against the cutting board. I've been using it everyday for a week now. It feels just as sharp as day one. And I've been using it against fibrous vegetables and wood cutting boards. My advice for deciding whether to purchase should rely on style (in this price range). If you purchase cheaper knives, they will certainly not perform the same; so they're not comparable. I would also add that there is a benefit to purchasing on Amazon, in terms of price. These are usually more expensive on knife websites. I'm glad I decided to try this one out. My wife was also very imp

If you love knives.. :)
So, can you get away with a $25 knife in place of this one? Absolutely. Not a big deal at all. Same can even be recommended with say, a bread knife, over a more expensive knife. Will it feel as nice as this knife? No. Of course not. The blade here is very simple. High quality steel, in a little body. The knife is very light, and has a decent sharpness to it. Not ultra razor sharp, as you would find with a chef's knife. Sharp enough for small work, fruit, veg, etc... which is just what you want. Don't want to lose a fingertip to a tomato, yeah? Absolutely not dull. It's a nice edge. Is it "game changing"? No, I don't think so. It wasn't like i started working up my fruit downstairs, and my kitchen game felt exalted. It worked well, and that's what I want from it. In the end, what does set this little guy apart is the handle, in my opinion. Sure, the steel is top quality, and will be better than a generic bought equivalent. But what was and is really nice is the olive wood handle. As with all handles, each use has their own preferences. For me, this fits nicely into the hand and once there, I fairly forgot about it. "Perfect". That's about the best compliment I can pay any knife, anywhere. So, if you're interested in a knife that is of a higher quality, and are willing to take care of it, this one ought to take care of you. Recommend. Is it worth the price? Totally up to you, like most things. Is it high in price? Maybe... maybe not. I don't know the ins and outs of the manufacturing process and material costs. Is it in the right ballpark? Yeah, I would think so. Again, it will be different to different people. I'm happy to have it in my knife bag.

Larger than typical so can double as a chopper
Paring knives are one of my essential kitchen tools for specific tasks. Photo 1 shows the size of the Cangshan knife (3.5") compared to another brand that I like and use a lot. (Note the other photos simply show the packaging which was great). Used the Cangshan knife to cut and core brussel sprouts to get a feel for whether it was better than the other knife above. It is not, but the Cangshan knife does have an advantage. Because it is slightly larger than the paring knives I like best (small hands) and has a nice wedge angle on the blade, it can easily be used just like a larger Chef's knife for mincing herbs and slicing. The handle made of olive wood has a nice grain and feel but would be better for my hands if it was a bit thicker. The notch toward the end of the handle and the tapered end does help with grip. Not sure how the blade is secured to the handle - notice the other paring knife is bolted - so time will tell if it holds together. As with all good knives it should be washed by hand. This is a nice addition to my knife collection. Recommended.
