Good Knife Sweetheart
I wanted to use this knife for a while before writing this review. I have had it for over a month now and used it almost every day. So far, I am really enjoying this knife. It was insanely sharp out of the box; cutting with it was almost like magic. I sharpen it with a few passes through a ceramic sharpener after most uses. I suspect that my sharpener angle is too obtuse for the thin blade. It is very sharp and still a pleasure to use, but it has lost a little of the magic. I should probably get a different sharpener or a whetstone, but I am still happy with the results. I enjoy the feel of the handle on this knife. It feels good in the hand and is rock solid. Naturally, the wooden handle means that you definitely don't want to put it in the dishwasher. Not that you would use a dishwasher for a good-quality knife anyway. The ergonomics of the blade and handle work well for me. I am a pretty big fella and have big hands. My wife is not a big fella and she has regular lady hands; it works well for her too. I have used it to cut homemade sushi, lots of meat, veggies, etc. I have other knives of similar size and function available, but this one is my first choice. I cannot say that this knife is better than other knives at a similar price point. I can say that I love using this blade and would purchase it again. I recommend this product without hesitation. I will track down my whetstone or find a pass-through sharpener to get that super sharp edge back. That is really the only thing that I have to offer as a caution; a standard sharpener may not be enough to keep it at its full potential. I update my review if new information comes to light; if there is no update, it is still doing great.

Excellent Quality, but a bit Overpriced
This is a good quality knife - well balanced, sharp and effective. I personally prefer different handle material due to the higher-maintenance required with olive wood. Note that you need to keep it dry and apply mineral oil periodically to keep it looking its best. My only real complaint is that it's currently priced at $130 which is simply more than you need to pay for a good Santoku knife of this quality. There are several options from well-known knife makers that will serve you at least as well for around $30 less. I'd go 4 stars at $100 and 5 if it was less.

Beautiful but pricey.
I have several Cangshan knives from a few different series and the olive wood is the most beautiful. These knives are all very sharp and I've been very happy with this brand. The OLIV series is much more pricey because of the custom handles, not because they have an extra special blade. If you're looking for similar blades that cost a little less and are a little lower maintenance, look at the TC series. Olive wood in general does great with being washed, but it does require oiling from time to time and you must be mindful of washing and drying immediately after use. I recommend any knives from the OLIV series if you intend to care for them well and they look really great on a magnetic knife rack!

A little pricey for a thin, partial tang knife.
The steel is good. It’s Sanvick so it will have a excellent corrosion resistance and be easy to sharpen. The trade-off is it will have less edge retention and tougher steels. There are definitely parts of the knife where the craftsmanship is wanting. You can see some areas where it’s a little bit rough. But overall it is a extremely sharp and excellently performing knife. It’s easier to get an edge when the blade stock is that thin. but it’s not unusual for kitchen knives. My main issue with a knife would be it’s extraordinary high price for what it is. The other issue is the grip is rather smooth for a kitchen knife. It is contoured and has a slight finger guard which will help your hand from slipping Ford but there’s no substitute for a grippier handle. Aesthetically speaking it’s a very nice looking knife. This is probably more of something you buy for a gift then yourself. The packaging is rather plain however. I like the knife and I really don’t want to give it three stars because it’s a good solid 4 to 4 1/2 star performance but the price is just too high for a knife like this. Especially considering the lack of a full tang. and while it’s not as important for a kitchen knife it does increase the overall strength and because it uses so much less steel it should be less expensive.

Beautiful and sharp, with a comfortable handle
I have a number of knives but had somehow missed adding a santoku to the lineup. This is a beautiful knife with a gorgeous olive wood handle that looks great on my knife bar, and it's also sharp and makes quick work of veggie prep. The shallow scoops on the side keep slices from sticking to the side of the knife, which is great and not necessarily something I was expecting when I first used it. Overall super pleased!
